The Best Skinny Fries

4 medium potatoes
2 tablespoons vegetable oil
Salt to taste
Paprika to taste

Preheat oven to 450 degrees F. Cut the potatoes into 1/2 inch sticks and place in a bowl of ice water to crisp. Drain and pat dry on paper towels. Arrange sticks in a single layer on a baking sheet. Sprinkle with oil. Shake pan to coat potatoes with oil. Bake in the oven until golden brown and tender, for 30 to 40 minutes, turning frequently. Sprinkle with salt and paprika.

FEARLESS "FRIED" CHICKEN

4 bone-in chicken breast halves or legs
1 egg white
1/2 cup buttermilk
1/2 cup all-purpose flour
1 tsp. baking powder
1 tsp. each of paprika, lean thyme, oregano, salt
1/2 - 1 tsp. cayenne pepper
1 tsp. vegetable oil

Preheat Oven to 425 degrees F.

Remove skin and any fat from chicken. In medium mixing bowl, whisk egg white with buttermilk.
Measure flour, baking powder and seasonings into a paper or plastic bag. Close top and gently shake to mix.
Dip a piece of chicken into buttermilk mixture, then place in bag. Close top and shake gently to evenly coat. Place on rack. Repeat with remaining chicken, one piece at a time.
Using pastry brush, lightly brush or dap oil over flour coating at chicken. This last step is essential for a crispy coat.
Bake in centre of preheated oven until coating is crisp and golden, from 40 - 45 minutes.

Sweet and Salty Trail Mix

This snacks is high in calcium.

Sweet and Salty Trail Mix

1 cup each unblanched almonds and hazelnuts
1 tbsp. vegetable oil
1/2 tsp. salt
1 cup roasted, salted soy nuts
1 cup dried apricots, quartered

Preheat oven to 250 degrees F. On a baking sheet, stir together almonds and hazelnuts. Drizzle with oil and sprinkle with salt. Toss to coat well. Spread out in a single layer on baking sheet. Bake for 8 to 10 minutes, until golden brown and fragrant. Remove from oven; put baking sheet on wire rack. Let nut mixture cool completely.

In a large bowl, stir together soy nuts, apricots, almonds and hazelnuts. Trail mix can be stored in an airtight container for up to 24 hours.
